Quinoa & Potato Cakes with Smoked Salmon & Parsley

Merry Merry Everyone!!

It’s still Christmas so I can’t stay on here long!

I just wanted to quickly share with you one of my favorite traditions around this time of year: Christmas Brunch!

Quinoa & Potato Cakes with Smoked Salmon & Parsley

What I Used

Med Potatoes. White Quinoa. Smoked Salmon. Greek Yoghurt [non-fat]. Lemon Juice. Red Onion. Parsley. Salt. Pepper. Oven at 425. Serves 6 happily.

Ok so I got the Quinoa cooking: 1/2cup Quinoa, 1 cup water, bring to boil – simmer for 13 mins or till water is absorbed. Meanwhile, I peeled and roughly shredded 5 med Potatoes and diced 1/2 cup of Red Onion.

When the Quiona was cooked and cooled [give it ~ 5mins], I added it to a large bowl with the Red Onions [reserving 2 tbsp for later] & Potatoes. Then I mixed in 2 med Eggs, Salt & Pepper.

When it was nice and mixed, I poured it in a medium round baking pan and let it bake for 30 mins or until the sides were lightly golden brown.

We played Charades in our PJs until it was time to pull it out and naturally, I was loosing. Pulled it out and let it cool for about 5 mins while I quickly made the Yoghurt Sauce.

Yoghurt Sauce:

2 large tbsp of non-fat Greek Yoghurt went in with the reserved Red Onions, Ground Black Pepper & 1tsp Lemon Juice, topping with 1 tbsp chopped Parsley. Fresh Dill is another good item if you have it!
