Yesterday – I had THE best message ever.
Left shaking my head, jaw slacking to the left…body feeling like buttaah.
So of course when I got home, I didn’t want to do shit.
And I didn’t. For like 3 hours.
Till I got hungry. And had to break out the Bass.
Then for like 30 mins, it was on.
I chose Steaming as my method because it’s quick (very important on days like this) yet also an easy way to maintain the integrity of the fish while cooking it to perfection.
Merging the vegetables, apple & capers formed this great medley that could probably stand up on its own as a side salad. And the light cilantro sauce is the perfect close to an entree like this.
Striped Bass and Tomatoes with Cilantro Sauce
What I Used
2, 0.5lb Striped Bass Fillets. 12-15 Grape Tomatoes. 2 handfuls Fresh Cilantro. 1/4 cup Vegetable Broth. 2 tbsp minced Basil. 1/2 cup diced Cucumbers. 1/2 cup diced Apple. 1 tbsp Capers. Olive Oil. Salt. Pepper.
What I Did
Preheat your oven to 500F.
Season both sides of the bass with salt & pepper and place in a roasting pan small enough to hold them comfortably.
Next, prep the vegetables by peeling & dicing ½ cup cucumbers, ½ cup apples and halving the grape tomatoes.
Julienne 2-3 tbsp of Basil and in a bowl, mix together the cucumbers, apples, tomatoes and basil in with 1 tbsp capers and 2 tbsp olive oil.
Season with salt & pepper and set aside to marinate.
Next – bring a pot of water to boil.
Once boiling, pour enough of the hot water into the roasting pan to come about ¼ of the way up the sides of the bass, then place in the oven for roast for about 8 mins.
Check for doneness by piercing the thickest part of the fish with a metal skewer or fork and hold there for about 10 seconds.
If the metal is warm when you remove it, the fish is ready.
While the fish is cooking, quickly make the cilantro sauce.
In a small pot, bring ¼ cup vegetable broth to a simmer.
Transfer the broth to a blender or (a jar if you’re using an immersion blender), along with 2 handfuls fresh cilantro and blend on high until the cilantro is pureed.
Season to taste with salt & pepper and set aside.
To serve, place the fish in the center of a plate, spoon an equal amount of the reserved vegetables over each fish and drizzle the cilantro sauce over and around the fish.
This completed my day.
