Chicken Corn Salad


As you may know, I went to a music festival this weekend and while the music was awesome, sadly, the festival food was awwwfuuulll.

I mean, part of what makes music festivals so awesome is the food, but in this case, the jambalaya had this muddy taste to it, the catfish was really dry, the fried chicken was still bleeding under the crust…I ran out of cash making one food mistake after another before I realized there was a BBQ joint a few blocks away that I passed on the way in.

So I’m writing this, munching on a Reuben that this bartender thinks is the next best thing to an orgasm. It’s supposed to be made with 14 hr smoked brisket and “the best homemade BBQ sauce evaahh”.

I guess she meant her orgasm, not mine cuz shits just aiiiight. If this were a porno….*shaking head

Anyway, enough of my horror stories, check out this salad I made Friday!

At first, I didn’t really have an idea of what I wanted to make when I started this. I think I was initially I just wanted something colorful. Ever get that way? Not really knowing what you want to make but the more you get into cooking it, the more tangible it becomes? And then you’re like, “Oh Shit! I better take some pictures!”

Story of this Salad.

I’m into Electro Swing music lately so I put some on, brought out all the shit I like and ended up having so much fun making this salad that I completely forgot about the potatoes at the end.

I’d eaten 2 helpings of this salad in before it hit me that my potatoes were now hardening in the oven. Gah! Hate it when that shit happens.


Chicken Corn Salad

What I Used

2 or 3 Grilled Chicken Breasts. 5 or 6 Romane Lettuce Leaves. 1 cup halved Cherry Tomatoes. 1 cup shaved and diced Cucumbers. 1 cup chopped Cilantro. 3 soft boiled Eggs.  3/4 ears of Corn. 1/2 in diced Potatoes (optional). Olive Oil. Salt. Pepper.

What I Did

Bring a large pot of water to boil  then add in the corn and let cook, covered, for about 15 mins or until the corn kernels can be easily punctured with a fork.

When the corn is tender, drain and let cool.

Meanwhile, rinse, pat-dry the chicken and season both sides with salt & pepper.


Grill or broil the chicken for about 5 min on either side or until it is cooked through.

Remove from heat and let the chicken rest for a few mins.

Put the halved tomatoes, chopped cilantro, diced cucumbers in a large bowl and add 1 tbsp of capers and the shaved corn.

Drizzle in 2 tbsp olive oil and season the mixture with salt and pepper.


Lastly, bring a small pot of water to boil and add in the eggs.

Boil the eggs on high heat for about 4 mins.

Remove the eggs and when cool, crack and peel the shell and halve the eggs.

Serve by spooning the corn mixture onto a lettuce leaf and topping the pieces of the grilled chicken.

I didn’t know what Electro Swing was either but how else would you describe this 🙂
