Roasted Shrimp with Creamy Jasmine Rice

Roasted Shrimp with Creamy Jasmine Rice
It’s black Friday and what am I supposed to do?
Am I going to go holiday shopping with the rest of these fucking maniacs and get peppered sprayed because I’m trying to buy a juicer?

I don’t understand why people press their face against the glass walls of a store waiting to run down an aisle, with 107 other crazed maniacs, trying to get a waffle-iron.
Walk in there, like a lady alright?
Or better yet, go in there someone other time, when it’s not fucking mayhem.

“Well what about the people that don’t have any money?”
Then get less shit.

The fastest way to not have money, is to go down to a department store and buy a bunch of shit.
I’m not saying you shouldn’t go out.
Just calm it the fuck down.

Dislocating your knee, having your wig fall off and “oh, I’m small, I need a competitive edge, lemme go get some bear mace…”
It’s false panic.
You’re basically going to the store version of the Running with the Bulls..
Just stay home.
Order online.

I remember some security guy died a few years back because of the Black Friday stampede.
Got trampled and died of a fucking heart attack.
The guy died.
Because somebody was trying to buy a fucking He-Man doll.

And you know what kills me?
I have not been able to find Walmart’s reaction.
I mean, aren’t they in a sales way, yelling ‘fire!’ in a crowded movie theater?

You know what, next year, I think I’m going to hire a fucking video crew and go in one of these store and just start talking to these people like,
“What is all the excitement about, huh?”
“What do you think is in there that’s going to make your life better?”

Aaah, I’m on my soapbox today!
Nah but seriously, if you’re out there, be careful.
And get something for me.
I’m into neutrals these days.

And yeah I presented this dish on the inside cover of a shoebox.
I did my shopping early 😀

Shrimp & Creamy Jasmine Rice

What I Used.

15-20 Uncooked Shrimp. 1 cup Jasmine Rice. 3 cups Chicken Broth. 1-2 tbsp Coriander Seeds. 2 tsp Minced Ginger. 1-2 tsp Cayenne Pepper. 1/2 cup Diced Cilantro. Water. Cod Fillets. ¾ cup Cream (I used Coconut Cream).  Salt. Pepper.

What I Did.

Cook rice according to the instructions.
Or your ricemaker, whatever.

When just cooked, remove from heat.
Set aside.

In a large pot, combine ¼ cup water and ¾ cup cream and bring to a simmer.
Add in the rice and chopped cilantro.
Stir to blend.
Adjust the seasoning with salt & pepper.
Set aside.

Next, fill a small pot with 3 cups vegetable broth.
Add in the crushed corriander and cayenne pepper.
Let it simmer for 20 mins, then season lightly with salt & pepper.
Strain through a sieve and set aside.

Preheat oven to 400F.
Rinse the shrimp thoroughly and peel the shells.
Add the shrimp to a large bowl and tip in 2 tsp cayenne pepper and 2 tsp minced ginger.
http://Ivegotcake.comMix well.
Place shrimp in the ‘fridge for at least 15 mins to marinate.

Prior to serving, place shrimp on tinfoil lined baking tray, being sure to keep them from touching.
Cook in oven for 5 mins or until shrimp starts to turn pink.
Flip shrimp to the other side and cook for another 2 mins.

Reheat broth.

Serve by serving the rice in a bowl and spooning the broth around it.
Place shrimp on top.
Eat with fork and knife.

  1. You’re spot on!! People are cray cray! Not going to lie I have just got home from the shops, been there since 9! It was awful! I’ll stick to shopping online! And this food looks so good 😏 Xo

      1. I was with you lol I thought you were ‘shaking your fucking head’ at my comment. I wasn’t sure if you knew what I meant lol but yeah, fuck the concept of Black Friday. I went to Target last night and shit was weak. I don’t see what’s all the hype about!

  2. That Black Friday shopping sounds insane, but I got a giggle out of how you described it all, apart from the part about the man being trampled to death! God, some people really, really love a bargin!

  3. The cilantro adds a beautiful color to this dish! But what’s up with not letting the shrimp touch? Were they causing a ruckus in the back seat on the way home and you said, ” Don’t make me stop this car, it’s gonna get uglier in here than an electronics aisle on Black Friday.” LOL!! I hear you Dana, I’m waiting for Monday. Oh yeah, and the shrimp look happier now that they are cuddling a little. Hope you you had a great Thanksgiving. Bob

  4. Talking about a great use of brown rice 🙂 But what a pretty dish you have got here … and, on top of that, it’s got shrimps (I am a big lover of shrimps and prawns)… Yummy!!! Great pictures by the way! 🙂 Have a nice weekend Dana. Cheers, Cris

  5. Another superb rant Ms Cake. Those shopping sales after major holidays are Nuts! I would rather stab myself in the eye with a fork than participate. These prawnies look absolutely delicious!! (I would rather stab these with a fork than my eye, but you get my drift..)

  6. We even heard about this mania in Toronto. WTF is right! It’s incredible that Walmart hasn’t commented, on the other hand, what would they say? I bet they even hire their own effin’ lackies to stand in line and drum up hysteria!
This dish sounds and looks beautiful. I love the Thai flavours you’ve used too. And the pink cloth you’ve used for straining is great!

  7. Girl you eat so healthy!! I like this recipe- have to think of something too these days, because this Christmas madness has already started here too and people eat like crazy- before the 24th I’m gonna end up with size 42 or something like that 😀

  8. I’m proud to say I didn’t do the crazy black Friday shopping. I did once for a GPS for my car, which I got for dirt cheap, but I haven’t in a few years. Not to mention that I checked out errbody’s flyer and NONE of it was a deal (none of what I want anyway)! There was stuff advertised at regular prices and faking as deals. I be on couponmom, so I KNOW what their prices were last month…
Last thing, there are 2 plates – is one mine? *insert puppy dog eye imagery here*

      1. Oh yes, gotcha. But sometimes I stretch my stomach and it wants to be filled even more. Every time I go to a buffet dinner (which is not as often as you might think), the next morning, I’m STARVING. Is that a thing?

  9. This looks so wholesome and delicious!
Note to self: don’t read Dana’s posts when hungry!

I don’t get the Black Friday madness but we are lucky here we have no such thing. Ah maybe the Boxing Day sales but they hardly compare.
Maybe things wouldn’t be too different if we did have a day-to-buy-shit-you-don’t-need-with-money-you-don’t-have?! 😉

Go on, get it out..
