Kale & Butternut Squash Soup
The cold weather finally came this past weekend.
Stole in from the midwest on Friday, blowing cold-as-fuck winds just for good measure.
“It is disturbingly cold out D, uh uh”, my friend said to me on the phone minutes after I woke up on Saturday.
“Like, I don’t feel so good right now.”
“Damn, it’s cold like that for real?” I asked.
“Shiiiiiiiiiit”, she replied.
Kale & Butternut Squash Soup
What I Used.
3-4 cups Fresh Kale Leaves. 4 cups Chicken Broth. 2 cups Diced Squash. 1 tsp minced Ginger. 1/2 cup Diced Scallions. Olive Oil. Salt. Pepper. Crushed Red Pepper. Leftover Turkey/Chicken (whatever you got).
What I Did.
Well first, put some really good music on.
Get your holiday cheer going.
Then heat 2 tbsp olive oil in a medium pot.
Add in the scallions and minced ginger.
Stir for a min to soften the scallions a bit.
Then add in the chicken broth, squash and kale.
Bring to a boil.
Season with salt & pepper.
Shake in some crushed red pepper.
Cover and lower heat.
Cook for about 15 mins or until the squash is tender.
Add in shreds of that leftover meat.
Or keep it vegetarian, that works too.
Adjust seasoning as needed.
Go back to binge watching or whatever the hell it is people do when it’s cold as shit outside.
Oh, and still got some turkey left?

It’s so easy Lena, you owe it to yourself to make it next time you have an itch to buy.
When I admire something from somewhere, I just ask the waiter what’s in it.
You can call Panera and ask them, then try and recreate it with their ingredients using this process as a baseline.
