Caesar Salad sans Anchovies
I have a meeting to run to and I am not at all prepared.
I hate moments like this, being unprepared.
Like between my two ears I’m the shit but every now and again, you gotta spell it out for folks so I gotta make this post quick.
I felt compelled to make this salad after having it for lunch at my work cafeteria last week.
For what feels like the umpteenth time, I left my lunch at home and was relegated the cafeteria food.
Chicken Caesar Salad was on the menu and I got optimistic.
That was the dumbest call I’ve made all year (so far).
It was just mouthful after mouthful of garlic and anchovies.
I spent the rest of the day shoving thick pieces of bread down my throat, trying to get rid of the taste and clear an anchovie bone.
Wondering how the fuck I got myself in this situation.
Caesar Salad, sans Anchovies
What I Used.
½ cup Parmesan Cheese. 2 Heads of Romaine Lettuce. 1 tsp Mustard, 3 Minced Garlic Cloves. 2 Egg Yolks. 3 tbsp Lemon Juice. ½ cup Vegetable Oil. Olive Oil. Salt. Pepper.
What I Did.
Pre-heat oven to 350F.
Add 1 tsp mustard, 3 minced garlic cloves, 2 egg yolks & 3 tbsp lemon juice to a blender.
Blend on med for about 30 sec before slowly drizzling in the ½ cup vegetable oil.
When the mixture begins to thicken, add in ¼ cup parmesan cheese.
Continue blending for another min until the mixture is smooth.
Sprinkle in salt & pepper, adjusting the taste as needed.
Set aside.
Chop the romaine lettuce and place in a large bowl.
Lightly spoon the caesar dressing on top.
Toss well.
Add in the remaining ¼ cup parmesan cheese.
Give it another good toss.
Set aside in the fridge.
For the crouton;
Line a baking tray with tin foil.
Lightly drizzle a couple slices of bread with olive oil.
Gently sprinkle salt & pepper on top.
Place in oven to bake for about 12 mins or until the side down is golden brown.
Flip the bread and bake until the other side is also golden brown.
If you can’t get a salad, what IS safe in the cafeteria….? SMH. Sorry about the garlic breath I’m sure you had to conquer through the rest of your day.
You know I’m not the biggest salad fan, but if I could get a piece of toast in each bite… GAME CHANGER. Gotta have this.

This looks sooooo yummy!! But, question: is putting anchovies in a caesar salads actually a thing now? Or is it just a sick joke played on people by your cafeteria? If not, I’m going to need a new go-to salad option.
I think that’s how traditional caesars are done, with anchovies and shit.
All that is too much for me tho

Jesus, I feel you. Your work does the same thing mine does. Drowns EVERYTHING in salad dressing and oil. I’ve actually stopped eating anything but the wraps and the salads they put into the fridge (they come undressed…. that sounds dirty!). This salad of yours looks AMAZING though. I wonder if it would taste good with avocado!

Eeww garlic breath is the worst:( Sorry about that. I am one of those people who never eat their veggies. I just pick at salads until I’m tired and then put it away. I know, so unhealthy! My husband hasn’t given up on me yet though and he continually tries to make them for me. This reminds me of one of his attempts. the best way to fool me into eating a coleslaw or salad is hiding a boiled egg in it. hahahaha!

My mom used to do the same thing when we were kids.
She’d ask us if we wanted a salad if she was making one for herself.
We;d say no.
She’d shrug but then crowd it up with everything awesome, non salady thing available.
And suddenly we’d be eating salad.

Chicken Caesar Salad is one of my ultimate favourte Go Tos and its amazing how kitchens can make it go soooo wrong. I recently had an awful caesar salad experience as well, in a restaurant that was supposed to be of v high standard. The dressing was foul and they literally drowned the leaves in it, so you just felt like you were eating creamy sour tasting gunk, Ugh!! Just thinking about it makes me want to hurl! Your pics look lovely and am sure it was super yummy!

This looks so simple and delicious, and I love the dressing – very similar to the way my mother makes homemade French mayonnaise, actually – have you ever tried eating asparagus or artichokes with this dressing?

Ceasar salad is my absolute favorite but I never understood the anchovies – yuck! I like it with some nice blackened chicken and croutons. WHERE THE CROUTONS? Oh right I guess theres that slice of toast… ok ok.

It’s all about getting the good (albeit more expensive) anchovies–one thing I miss about Fairway is that they carried this really fabulous brand of anchovies from outside Barcelona and they are so not the strong, briny, fishy types, but if you can’t get the good stuff then going without is probably the best thing anyway.
(Related: I may have spent a good twenty minutes looking for a place that sells them online just now.)
I love the idea of serving this on toast–you need something substantial to soak up the good dressing with that egg in it!

Yeah I was lazy about the croutons, instead of breaking the bread up ahead of time I just said like fuck it, do it as you eat.
