Not fucking good.


So I’m doing salads like this all week.







Southwest Salad

What I Used

1 Chicken Breast. 2 cups Lettuce (Romaine, Bibb, whatever). 1 cup Frisee. 1 cup Spinach. 2/3 Corn Cobs. 5-6 Med Strawberries. 1 Med Cucumber. 1 Boiled Egg. Salt. Pepper. Olive Oil.

What I Did

Preheat the oven to 375F.

Line 2 baking trays with tinfoil.
Place the chicken on one and season both sides with salt, pepper and a decent drizzle of olive oil.

Place the corn on the other and season both sides with salt, pepper and a liberal drizzle of olive oil.


Place the chicken in the oven to roast for 25 mins or until cooked through.
If you already have cooked chicken then skip this part.
Place the corn in the broiler, rotating a couple times until lightly charred.


Cut the rest of the veggies up, including the strawberries, and put in a large bowl.
The greater the vegetable variety, the better this salad is gonna get.


Using a knife, shave the roasted corn kernals off the cob.
Add to the bowl.

Using a fork, tear the chicken apart until you achieve the shredded texture you want.
Add to the bowl.


Toss the salad with a whatever dressing you want.
I used spicy mayo as my dressing.
Note: The heavier the dressing the less you need.

Spicy Mayo:
1 part sriracha + 1 part mayo (vegan mayo in my case)


Mix everything together.
Slice the boiled egg.

Feel better about yourself.

  1. Salad looks great (tad unsure about the strawberries, don’t want to be ‘fruitist’ however and will keep an open mind.) You always make corn look so darned good. 😁 BTW, I love your sparkly nail-polish. (I am pulling my eating habits back into line this week too, been a little heavy handed on the wine and cheese the last few weekends….😳)

  2. Well it definitely looks good… love me some sriracha mayo! I feel you though, it’s hard to eat well in the summer, such good food to deprive yourself of.

      1. Don’t feel like you have to eat salads and healthy stuff all the time Dana! You should allow yourself to eat something ‘not so healthy’ from time to time! I don’t eat salads all the time, God, that would be painful! I need my carbs to live a happy life 😂

  3. I have to say this is definitely doable right here, right now. My only concern is where am I supposed to find strawberries at. Totes not their season here. (Note: we eat mostly seasonal veggies and fruits, usually produced in some old lady’s garden – or in our own, that is. Finding strawberries not in their season is hard, not to mention they’ll most probably be nitrates-infested like shit. Hate me some chemical food. Blergh!)

      So fuck the strawberries and put in blueberries or kiwis..whatever fruit is in season.
      Or skip the fruit in general, no one gives a shit about strawberries anyway 😀 😀

  4. This looks amazing! I agree the more veggies the better and the less guilty we have to feel. It’s like every extra vegetable we put on a salad will undo every donut we have every had… Okay one can wish right?!

        For something like this salad, I got lazy and said ah fuck it.

      So here it is.
      I couldn’t find a way to articulate the origins of this salad when I drafted this, so this intro is what it is lol

  6. That looks perfect! I love the addition of the strawberries. My healthy eating is all going to shit too for reals. Vacation, drinking, summer, ugh. Why is it the season when we’re supposed to be half naked all the time is also the season when I want to eat nothing but jalapeno bbq burgers and drink mimosas all damn day??

  8. I cant lie, my eating habits lately have been less than stellar. I have been alternating between fresh fish and salads to bring my body back to normal . This recipe look awesome . I cat wait to try it . Thanks for sharing and I love your bright photography . And girlll this salad looks so good, I’m not a healthy person (I cant stop eating fries and burgers!) but you always make me want to go back home and change to a healthy person!
