Not fucking good.
So I’m doing salads like this all week.
What I Used
1 Chicken Breast. 2 cups Lettuce (Romaine, Bibb, whatever). 1 cup Frisee. 1 cup Spinach. 2/3 Corn Cobs. 5-6 Med Strawberries. 1 Med Cucumber. 1 Boiled Egg. Salt. Pepper. Olive Oil.
What I Did
Preheat the oven to 375F.
Line 2 baking trays with tinfoil.
Place the chicken on one and season both sides with salt, pepper and a decent drizzle of olive oil.
Place the chicken in the oven to roast for 25 mins or until cooked through.
If you already have cooked chicken then skip this part.
Place the corn in the broiler, rotating a couple times until lightly charred.
Using a knife, shave the roasted corn kernals off the cob.
Add to the bowl.
1 part sriracha + 1 part mayo (vegan mayo in my case)
Mix everything together.
Slice the boiled egg.
