Butternut Squash Pizza Pies

I mean you gotta admit, being snowed in under a big blizzard is kinda fun.

Sledding down the street during the day?
Making slutty snow angels, building drunk snowmen…c’monnn.


So I’m sure you heard, my teams out of the big game.
Lost the AFC to Denver and I mean, that’s not so bad, right, we did alright there, we did good.

I mean we’ve had so many players injured for so fucking long Brady was basically driving a rental car.

Besides, we literally just won the Superbowl last year so I mean did you really wanna see our smiling fat mugs again?
You want another scandal already??


Couple weeks ago I was inspired to find a creative use for squash because squash soup and fucking…roasted whatever was getting old.

So I made a couple pizzas, did not make not the dough, just the pizzas and used butternut squash as the base instead of tomato sauce because why the fuck not, right?

And being that I had some leftovers from that coconut kale & chicken salad, I made that my second pie.


This one is more an assembly recipe so  it’s better to start it when you have all your toppings ready.
Like, cooked and shit.

So much fucking easier that way.









Butternut Squash Pizza Pies 


What I Used

2 pre-made pizza crusts (better if you make your own, I’m certain of this). 2 cups Sauteed Mushrooms. ¾ cup Sauteed Pancetta Bits. 2 cups Arugula. ¾ cup Shaved Asiago Cheese. ¾ cup Ground Parmesan Cheese. Other shit (optional).

What I Did

Make some pizza dough or buy some, they both work.
Pre-heat the oven to 400F.


Cut the butternut squash into chunks.
Line a baking tray with tinfoil and layer the squash on it.
Drizzle olive oil over the squash and a generous sprinkling of salt & pepper.

Place the tray in the oven to cook until the squash can be easily penetrated with a fork.
Remove from oven and set aside to cool for a little bit.


When the squash pieces are slightly cool, put them in a blender, add a little bit more olive oil and blend until a rough puree is achieved.
It should look like this.

Adjust seasoning with salt and pepper but take it easy alright?
Because chances are the dough is already salted, the shit you’re gonna add on the pizza is gonna be seasoned so just fucking take it easy alright, this shit adds up.


Mushroom & Pancetta Pizza with Arugula and Asiago Cheese.

Gently baste the edges of the dough with olive oil.
This will help it turn golden brown and crispy when it goes in the oven.

Using a big spoon, spread the squash puree over the dough, leaving about an inch from the edge.

Layer the kale, basil and mushrooms on top.
Really spread that shit out.

Shave the asiago cheese on top, as much or as little as you like.


Now – at this point you have the option to go meat-motherfucking-free….or you can be the animal you already are and dump those pancetta bits on top.http://ivegotcake.comhttp://ivegotcake.com

Whatever, it’s your body.

Whatever you decide, shave a little more cheese on top and place the pizza pie in the broiler to cook for about 8 mins or until the crust turns golden brown.

Slice and serve immediately.


Chicken & Kale Pizza.

Same as above – gently baste the edges of the dough with olive oil.
This will help it turn golden brown and crispy when it goes in the oven.

Using a big spoon, spread the squash puree over the dough, leaving about an inch from the edge.

Layer the kale and chicken on top of the squash base.
Just like a burger, you can do the least or the most, follow your heart.

Generously sprinkle the crushed parmesean cheese on top of thangs…

  1. Oh man, I enjoy a decent snowstorm that makes you slow down a bit for a few days–especially over a weekend where you can be a total slob and not feel at all bad about it–but this…is not great. Essentially we got all the snow we normally get in a season down here in the course of two days, so it’s going to be a very slow process getting dug out of it all. (I’m hoping that things are passable by Friday so I can get to the train station to go to New York at this point.) Right now a truck with a plow attached to it is stuck a block or two away and has been for a few hours now, so I feel like that’s a bad omen for how this cleanup process will go.

    Your pizzas, on the other hand, look great–and that’s a great use for butternut squash that isn’t, as you said, just another bowl of soup.

    1. Awww – now see if we didn’t just go through this last year and I was in your shoes EXACTLY THIS TIME LAST YEAR – I would sympathize with you.

      But…the roles are revered and I reflect about all the pictures from your neck of the woods with glee and satisfaction 😀

      Seriously though listen to me – you just gotta lower your expectations, literally have zero expectations of getting out of it and sure enough, gradually, you’ll be rid of it.
      Sooner than you think.

      If you start looking at it like this fucking monument of snow, you’ll just get depressed and angry. But if you have no expectations and just look at shoveling 8 inches, maybe 10 inches a day as like, a daily task., you’ll plow throw things a lot easier.

  2. Great idea! I sometimes use pureed squash and veg as a gravy or sauce, but I never thought to use it as a pizza sauce! They look great. What a fun concept. Lmao at the line about Brady driving a rental car 😁 Good one.

  3. Was it as bad as predicted? I saw that NYC got it bad, didn’t hear about Boston though. We got nothing, not even rain.
    The pizzas look and sound delicious. I often use other things instead of tomato sauce as the base: onion confit, béchamel, tandoori paste, pesto etc, love the use of baked squash, so pretty too.

      1. Ireland is one of the coldest countries in the world. This year however, there has only being one or two showers of snow.
        For a girl that was born and raised in the sun, I love it…ha ha.

    1. No the kale really isn’t soggy because you ind of squeeze a lot of the wetness out it ahead of time.
      Like how I did it in the coconut chicken & kale salad, you know?

      Just kinda gently squeeze the water out and pat-dry the kale with a paper towel and you’re good.

      As for the snow, we got peanuts. 3-5 inches. People north of boston got even less.
      Yeah in Canada, couple feet of snow is just a day in the life, haha.

    1. That was the best out of the two.
      The mushrooms and arugula one was nice, would have been better without the Pancetta though.
      Isn’t that odd?
      My friend thought otherwise but I didn’t think it was needed.

      Slutty snow angels are snow angles you make in the snow with big boobs and giant nipples – and then you lay some lingerie and thongs on top of it.
      Slice some fruit or a red veggie for the mouth, lay some weave on top for the hair…it’s easy actually.
