Grilled Squid Salad
I can’t lie, it’s good to be back cooking again.
Real good.
I went to bed last night thinking about what I was going to cook today and I was so fucking hype.
I actually did a happy dance.
OooOOoooooOoooO weeeee, I get to play with food again!!!
Grilled Squid Salad
What I Used
1.5 – 2lb Fresh Squid (cleaned). An Assortment of Leafy Vegetables. Olive Oil. 1 Lemon. Salt. Pepper.
What I did
All I ate in Cartagena was seafood.
Lobster, squid, octopus, shrimp, hake, monkfish……..why the fuck would I break that momentum?
Get you grill ready.
Orrrrrr, if you’re like me and don’t have one, preheat your broiler.
Drizzle the squid with olive oil and sprinkle with salt and pepper.
Lay the squid on the grill (or on a foiled lined baking tray if broiling), careful so the smaller pieces don’t slip through.
Add the lemons to the grill too, sliced in half, open half towards the heat source.
Cook the squid for 2 mins or the side facing the heat source is lightly browned.
Flip and do the same on the other side.
DO NOT OVERCOOK.
Remove from heat when cooked and allow to cool, slightly.
Remove the lemon as well when also browned.
Meanwhile in a large bowl, toss the leafy vegetables together with olive oil, salt and pepper. Squeeze the grilled lemon over it.
Slice the squid into ½ inch rounds.
Add the squid to the salad.
Toss and serve immediately.

Note: when you flip, tip out any liquid that’s accumulated inside.

You need a cast iron plancha/grill that you can put on top of your stove–it’s SO worth the $30 or so it costs (from Lodge, naturally) and you can use it while doing cookouts on actual fires, too. The only problem with the broiler is that it’s impossible to control for really short cooking periods, as evidenced by the many pieces of bread I’ve burned over the years thanks to various broilers.
Needless to say, I’m super- impressed you don’t overcook your squid in the broiler.
Nah I got this broiler on lock-motherfukkin-DOWN.
And I do have the cast iron stovetop grill thing. I thought about using it too. Sigh.

This dish looks and sounds absolutely awesome. One of my all-time favourites is grilled squid. Your vacations sounds like it was a blast and you’re right, why change a good thing!
You need to get yourself a cast iron grill pan! When I’m too lazy to turn on the grill, I pull out the grill pan and grill on it, it’s amazing!
I haveeee oneeeeee……I know I know I know! I just like seeing the fire directly under/over my food when I think of grilling, I guess, maybe that’s why I continue to forge ahead with my broiler.

I loved your vacay pics but girl I am SO GLAD you are back at it in the kitchen. I was missing the food pics (though the stuff you were eating there looked freaking amazing).
I love how light this salad is and when I’m feeling like switching gears to pescatarian, which I sometimes do, I could see myself making something similar. Maybe not squid. I am not THAT pesca, but some sort of fishy lil creature that I could eat for a day haha!
