Wanna play a quick game of overrated / underrated?

Ok, what’s one popular thing or phenomenon that you think is overrated and what’s one that you think is underrated?
It can be past or present.

I’ll go first.

 

Overrated: Coldplay
Those guys sell out some of the biggest stadiums and arenas like 19 times in a row but I gotta tell you, I don’t get  the hype.
I’ve listened to a shit ton of their song, watched the videos with Beyonce and Rihanna, I do NOT get it.
It’s gotta be me.

Underrated: Water
Water is one of the most fucking underrated drinks of all time.
Coke, artificially flavored juices, energy drinks, there’s no need for none of that stuff.
Just drink some water, you’ll be fine.

 

Overrated: All these cooking competition shows on TV
These guys are running around screaming “yes yes, yes chef!” as if the chef is some war hero instead of just making fucking tuna tartare. Get over yourself.

Underrated: The Olympics
I’m not talking about checking your teams status or your country’s medal count, I mean actually watching the games.
People just wanna know if their team won or not but like nobody ever follows the contenders through to the finals.
Did you see the shit they fucking had to do just to make the quarter finals!!?!

Coconut Milk Poached Shrimp Cocktail

What I Used

1lb Jumbo Shrimp (shells on). 3 cups Light Coconut Milk.  3 cups Water. 1 tsp Baking Soda. Salt. 1 Large Ziplock Bag.

What I Did

Still on my seafood kick, no surprise there and this little appetizer number has all the elements of fresh seafood.
I made this for myself and ate it all by myself. No shame.

 

Begin by peeling the shells from the shrimp and set the shells aside.
DO NOT rinse the shrimp.

Set the shrimp aside in a separate bowl and toss with the baking soda and a light sprinkle of salt.
The baking soda helps keep the shrimp retain its moisture so it stays plump. Nice, right?
Place in fridge.

 

Add the coconut milk and water to a med pot and bring to a boil.
When the liquid is boiling, add the shrimp shells and some salt.
Don’t overdo it on the salt. You’re aiming for a lightly seasoned poaching liquid, go easy.
Reduce the heat to a simmer and simmer, uncovered, for 15 mins.

 

While the shells are infusing in the coconut milk, prepare an ice bath (big bowl of water + tons of ice) to blanch the shrimp in later.
Get your ziplock bag ready.

After 15 mins, using a slotted spoon, remove the shells from the liquid and toss.

Add the shrimp to the liquid and let cook, entirely immersed until they just begin to turn pink.

Note: Pay close fucking attention here because it really is that fucking easy to overcook shrimp and OVERCOOKED SHRIMP SUUUUCKS.

 

As soon as they turn pink, using the same slotted spoon, immediately remove them from the poaching liquid and place them in the ziplock bag.
This is so we don’t loose the all that wonderful flavor that they were just poached in before we blanch them in ice water.
Push out all the air from the ziplock bag then seal it.

Immerse the bag in the ice bath you prepared earlier until the shrimp is cool to touch.

 

When the shrimp is cool, dry the bag off and place it in the fridge to chill for a little bit.

Serve with Marinara sauce.
I chose to use salsa.

9. Add in the shrimp and let the shrimp cook, immersed in the liquid, gently simmering until they just begin to turn pink.
Note: Pay close fucking attention here because it really is that fucking easy to overcook shrimp and OVERCOOKED SHRIMP SUUUUUCKS.

10. As soon as they turn pink, using the same slotted spoon, immediately remove them from the poaching liquid and place in the ziplock bag.

12. When the shrimp is cool to touch, dry the bag off and place it in the fridge to chill a litle.

  1. LOVE these photos! The shrimp on the ice cubes is great.

    Overrated: Taylor Swift. She looooooves to play the underdog/victim card, which is ridiculous considering her dad bought her first record deal and she literally checks off every box when it comes to accepted standard female beauty. Some of her songs are OK, but to me she’s the epitome of overrated.

    Underrated: too many TV shows to count, but I’ll start with Happy Endings. It was an amazing little sitcom and if you get Hulu, WATCH IT IMMEDIATELY as the whole series is available.

    I’m with you on endless cooking competitions, save for Top Chef because that show is my everything and it’s actually well-produced and the chefs who go on it actually become more successful from the exposure. That said, I will say Richard Blais from that show is overrated as he’s now EVERYWHERE and it’s irritating AF, while Gail Simmons is underrated because there isn’t such a thing as too much Gail.

    1. Glad you like the photos, that’s a relief! Because I wasn’t really crazy about them to be honest. I thought they could have been a little bit more sharp but maybe that’s just me.

      But not importantly, THANK YOUUUUUU. Taylor Swift doesn’t bring shit to the table yet she’s always in the news for some reason and I don’t get it.

    I like this game…
    Overrated: The Beatles. THERE I SAID IT. I get that they were a big deal at the time, but it’s been like 50 years, can we get over it?
    Underrated: Peace and quiet and the ability to not be bored with your own company. Sometimes it’s nice to just stand about for 5 minutes without feeling the need to scroll on your phone.

    Overrated: “The Walking Dead”. How long can you drag out a story about zombies (or “walkers”, whatever you wanna call them)? And then “Talking Dead” just makes me dislike it even more…does there really need to be an hour-long discussion immediately following each episode? Dishonorable mentions to any reality show featuring “wives”. Or any reality show for that matter.

    Underrated: Treach from Naughty by Nature. Dude was one of the dopest rappers of the 90s (when you actually sit there and think about his lyrics) but you never hear anyone mention him in their top 10, or even 20. Honorable mentions to Chuck Inglish.

  5. overrated: cold weather. people get so excited for winter and snow and cute warm clothes and I’m just like??? winter is fun for the holidays. after that it just gets annoying. 1. it gets dark at 4 pm. 2. you don’t get to wear cute tights and booties. all you wear is sweatshirts and jeans and the same jacket every single day to stay warm. 3. IT’S COLD.
    underrated: sounds. i feel like everyone always goes on about views or smells or taste. but they never pay attention to sounds!! listen to those heels clicking on the sidewalk. listen to the ocean. listen to deep voices and contagious laughs. appreciate sounds! /KM

      And add Fall to that overrated list too.
      Fucking hate layering.

  6. I love this overrated/underrated game! I will have to come up with a bunch more tonight. Also, 100% agree on water being underrated. I mean, we’re made up of mostly water. And nobody event thinks about how amazing water is. It’s pretty much the greatest thing on the planet!

    Overrated: GPS. Yeah, it tells me where to go next, but it doesn’t give me the whole layout and let me choose from the full list of options.

    Underrated: An actual paper map. Everything is laid out for you. And you have to admit there’s something oddly attractive about a man reading a map.

    Overrated: Halloween. I mean, sure it’s sort of fun if you’re into that sort of thing. But Halloween has gotten way, way, way out of hand in the past decade or so. Stores are filled with Halloween merchandise before Labor Day. That’s two full months of shopping time for one evening that takes a half-hour at most to shop for and it’s a fake holiday anyway. Weak.

    Underrated: The library. There are lots of books in there. And you can take them home and read them for free! And then you can bring them back so they don’t clutter up your house. The library is totally underrated.

  7. Gawd I love shrimp! These pictures are great! So true story- at my wedding I purposely picked coconut shrimp (as an appetizer)from our caterers because theirs is amazing…Long story short we got back from doing pictures and they had run out😡 I mean we’re paying for it, shouldn’t they have saved some for us! Four years later and I’m still bitter.
    Overrated – Taylor Swift ( sorry) Look you can only play the victim card for so long. Writing songs about people who “wronged you” all the time is just another way of bullying. Can’t have it both ways. Her music is just ok. But she’s great to her fans ( I’ll give her that) I don’t get why there’s so much hype for her. And why everyone goes nuts if anyone makes a negative comment about her. Maybe I’m just too old. Lol
    Underrated- I’m going to have to agree with you on water! I drink so much water everyday, so many healthy benefits too!

About those yummy yummy photos that always make me super hungry… I hope you know I religiously follow your steps and try it at home. Never looked like yours, obviously but well.. A girl gotta try 😂
