Aw jeez, I hope these pictures aren’t too dark?

I was a little drunk when I made this and I………it was little har ……..I had a little trouble focusing and I made…….I made a lot of mistakes during this shoot.

And we all know what you lose in picture quality you have to make up for during editing.
The worse the native pictures, the more you gotta edit so hopefully these edits are too dark. I had to cover up many, many fucks ups.

Speeeeaking of which, I accidentally hung out with children over the weekend.

An old friend is moving back home to Michigan at the end of the month and asked that I come over and do the whole let’s catch up so I can go away, thing.

And she has not one but two kids.
And they are terrible. And annoying.

I’ll put it like this – if you ever want to know what you flaws are, have a kid draw you.

Thyme Chicken and Mushrooms

What I Used

3 or 4 Chicken leg and thigh pieces (sub: just chicken thigs). 1 cup sliced Mushrooms (button, shitake, oyster, any kind of mushroom will do). 1 small handful Fresh Thyme. ¼ cup Olive Oil. Salt. Pepper.

What I Did

Don’t think I’m done with summer. I bought this chicken by accident.

Preheat your oven to 425F
Rinse and pat dry the chicken.

Season both sides of the meat with salt & pepper.

Heat 3 tbsp olive oil in an oven proof or cast iron skillet.
When the oil is hot (not smoking hot), add the chicken, skin side down, to the pan.

Cook under med or med-high heat, until the side down begins to crisp and is blackened-brown. Then flip and cook the other side.

When the other side begins to turn golden brown (gently lift an end and check this), remove the pan from the heat.

Drizzle an additional 2 tbsp olive oil over the chicken and add the mushrooms over and around the chicken.
Lay a small handful of fresh thyme over and around the chicken.
Place the pan in the oven.

Cook in the oven, uncovered, for 25 mins or until the juices run clear when pricked with a fork at the thickest part of the meat.
Remove from oven and set aside to rest for 2-3 mins.

Serve with the starch or vegetable of your choice.

Note: Do turn on the fan above your stove or open some windows if you don’t have an oven exhaust.
As you aim towards a blackened chicken, the air may get a little smoky but don’t freak out.

Just keep your eye on the meat, open up some windows and put the air on.
You’ll be alright.

  1. I swear to god we had something similar on Sunday for dinner–chicken wings with mushrooms, garlic, thyme, and white wine and it was DELICIOUS. I actually liked my photos so I’m saving on posting them until later in the fall when lighting is terrible, but needless to say great minds were aligned this weekend!

    1. Alright!!!!
That’s what I’m talking about, woman!!

That and for the most part, I try not to eat or cook too much fattening food.

But on the other hand, I’ve seen some big girls DO THE DAMN thing! They have such incredibly great style, it forces me to step my game up, haha!!

    1. hey hey hey!!
      I’ll have you know….
shit. When you’re right you’re right. I guess I really am balking at the thought of summer ending.

But can you blame me? I already feel phantom pains from shoveling snow.

  2. Oh girl, you make me laugh! Kids definitely keep you on your toes. I’m still trying to figure out if that’s a good thing?! Lol These pictures don’t look dark to me and the chicken looks fabulous! I love the scent of fresh thyme.
