God is there anything worse than dried fucking chicken?

I went to arguably one of the best soul food restaurants in town recently and the chicken at this place was fucking awful and I’ve been to a lot of BAD soul food restaurants.

The chicken here though was so dry like it literally made me angry just eating it.

 

I don’t get it.
Chicken is the one of the greatest food there is.

It’s fucking delicious, you can make all kinds of things with it, you can cook it all kinds of ways….think about some bomb ass wings you’ve had – it’s fucking great.

But when it’s dried out?

Eating dry chicken is literally a job, like your jaw actually gets sore.

 

I bet in the future when people want to avoid getting a double-chin, they just do the dry chicken workout.

Where you just eat half a chicken that’s really dry.
And you just sit there angrily chewing this shit, developing these mussels that prevent you from getting that Pelican Chin thing.

You just keep eating all this dry fucking chicken until people start telling you you’ve never looked better and you can wear turtlenecks again without looking like everything from the crown of your head to your hip is all one piece.

 

Alright, let’s get back on track here.

 

This soup is the shit for all the obvious reasons (see: title) but I’m also showing off this dope ass watch from Jord Watches.

Chicken & Kale Soup with Mushrooms and White Beans

What I Used

8-10 cups Chicken Broth. 4 Chicken Breasts Fillets (chopped into 1″ chunks. sub: 2 turkey breast fillets). 3 Large Handfuls of Fresh Kale Leaves. 1 can White Kidney Beans (or 2 cups cooked beans: sub: any kind of beans). 7-8 Med Portabello Mushrooms (sliced. sub: shitake, white button or oyster mushrooms). 1 Large Onion (diced). 2 tsp. Garlic Powder. 2 tsp. Smoked Paprika. Olive Oil. Salt. Pepper. 2-3 Bay Leaves. 1 pinch Saffron (optional, for color).
Additional Spices as you see fit.

What I Did

Last week I suffered a terrible case of seasonal allergies and meds aside, I knew I needed to fortify myself with some soup. So I made one.
And I deliberately packed it with high protein and high vitamin items like kale and beans because I had the feeling shit was going to get worse before it got better.

And of course, it did.

 

Stuffed up nose, ridiculous headcolds, eyes watering so bad they’d just kind of crust over when I fell asleep.

Having to breath through my mouth at night because my nose was sealed completely shut…. only to come bolting awake in panic, suffocating, when my mouth would eventually fall close.

The whole thing was  just fucking miserable and this soup was about the only thing that made me feel better. 
And the chicken was delicious…

 

 

Heat 2 -3 tbsp olive oil in a large pot and add the onions and minced garlic.
When the onions begin to turn translucent, add in the mushrooms and poultry.

Shake in a good sprinkle of salt, pepper and whatever other spices you want to add.

Cook under med-high heat, stirring often, until the chicken is browned.

 

When the chicken is brown on both sides and the mushrooms have softened, pour in the broth and add in the kidney beans, the bay leaves and the kale.
Also add in a small pinch of the saffron threads and stir to incorporate

Cook, covered, for about 10 mins or until the kale leaves are tender.
Taste, and adjust the seasoning where necessary.

Serve with a big spoon and a fist of bread.

This makes between 6 – 8 servings and produces certified, non-dry chicken.

Garnish with grated Parmesan Cheese or torn Bacon bits.

7. Taste, and adjust the seasoning where necessary.
8. Serve on it’s own or with a piece of bread. You’re gonna wanna mop up all these juices.

    Talking about dried chicken, it is easy for them to go badly made if they are not well season I believe. Not acceptable in a restaurant though ☺

Well I’m not shy about chicken is my fav meat or is it just poultry, hmmmmm, well anyhoo, its my fav so I love it when your recipes involve it.   3. I’m still picky about chicken breasts because growing up my mom would cook the eff out of them because salmonella, and so now the only way I can eat them is off a whole roasted chicken. This is why my weekday chicken recipes are so thigh-focused.

      Turkey.

      Off season. Like Turkey legs and turkey thigh meat is DELICIOUS! Why should I have to wait till thanksgiving when they’re dripping with all that excess heart-stopping shit when I can use their lean meat now?

  4. i don’t do breast meat cus of the dry-ness, i don’t care if it’s been stewed in stomach-pain-inducing butter or wrapped in bacon, gimme my dark thigh meat and leave me the eff alone while i make love to it.

  5. Seriously, there’s nothing worse than dry chicken! Yuck! Chicken is so easy to make, how can you dry it out. Anyhow, this soup looks amazing and I love me some mushrooms. I will be printing off this recipe:)

  6. Great job & recipe doll … yeah i hate dry turkey & chicken too. Did some experimenting with both chicken & turkey legs/drumsticks using only 2 or 3 ingredients; a really simple basic technique for good juicy meats … will be sharing that next week on ICOOKSTUFF ! 🙂
