It rained all weekend so I stayed home and made comfort food out of sausage and potatoes, then dedicated a terrifying amount of time to Neflix. 

 

It’s Tuesday and still raining, so I’m still watching Netflix.
Stranger Things.

Bangers & Mash (Sausage & Mashed Potatoes)

What I Used

8-10 Pork or Beef Sausages (the hot ones). 1lb Cherry Tomatoes. 3 Large Russet Potatoes. 1/4 cup Milk (sub: soymilk). 1/4 cup Balsamic Vinegar. 1/2 Chicken or Beef Broth. Olive Oil. Salt. Pepper.

What I Did

 

Preheat your oven to 375F and locate a baking pan appropriately sized such that when the sausages are added to it, they fit in a single layer but not too snugly.

Add the tomatoes to the baking pan along with the garlic cloves (optional).
Drizzle balsamic vinegar and olive oil over the tomatoes and season with salt & pepper.

Feel free to shake in other seasonings if you’d like just don’t overdo it.

Add the broth, then the sausages to the baking tray.
Mix them around with the tomatoes, then adjust the sausage such that they rest on top of the tomatoes.
Sprinkle a little salt and pepper on top of the sausages and lightly drizzle a little more olive oil over them.

Place in the oven.
Cook for 30 mins then flip the sausages and allow another 20 mins to finish cooking.

 

Meanwhile peel and roughly chop the potatoes.

Add some water to a large pot and salt the water. Add the chopped potatoes to the pot.

Boil, uncovered, until the potatoes are soft and can easily be separated by a fork.
Thoroughly drain the potatoes.

Place the now-drained potatoes back into the pot and add the butter and milk.
Using a fork or spoon, integrate all three thoroughly until the potatoes are light and fluffy.

Serve by spooning the mashed potatoes into a bowl, placing a couple links of sausage on top and spooning the roasted tomatoes and the juice at the bottom of the pan over everything.

  1. Oh, I’m so tempted to make a pun about those sausages, but I’ll refrain from completely outing my dorkiness. The prep of them does remind me of a really good sausage and grape recipe that I might switch out for sausages and cherry/grape tomatoes because this looks too good to pass up.

    1. Hahaha!! The way these little fat things lay are just ripe for a pun, I know.
      This really is good though, like a really great way to use tiny tomatoes and combined with a spicy sausage, they really blend well. The whole thing just comes together beautifully.

      I still kinda wanna hear what you were gonna say…

      It’s a handheld peeler. Your index finger fits into the little slot on top so that your palms lay flat down….and you just sorta run your hand over the item your peeling.
      It’s pretty neat. Think I found it at The Dollar Store lol

  2. Bangers and mash is something I’ve always wanted to make for myself. You make it look pretty easy and delicious. And, I have actually needed a new show to watch, so you’re really delivering the goods today lol Thumbs up 😉

  3. Stranger Things is great, but I have a problem. The wife and I have two episodes remaining. She wants to “save” them so that we can watch them closer to when the new season begins, but I want to watch them while I still remember the first six fairly well. Do I watch them without telling her? Do I simply suck it up and agree with the wife? The other option would be to tell her “we have to watch this together NOW,” but I’m nixing that idea before doing it because this is TV, come on, I will save the battles for something important.

    1. I’m like you’re wife. I hate coming to the end of a good show so I end up ‘savoring’ the last couple episodes because I just don’t want it to end.
      So I’m a liiiiiitle biased but if I were you, I’d watch them without telling her.

      It takes great mental fortitude to keep away from something that good till who-knows-when 2017.
      So just watch that shit on the downlow so you can get some damn closure 😀

  4. Wow – that looks great and I just love your plates. I think we will be eating a lot of this as I just dug up yet another wheelbarrow of potatoes – this year they went crazy on the hugelkultur. Really nice idea cooking them with the tomatoes as well. I think it might be my Friday after I get home after a crazy day of teaching dinner 🙂

  5. Surprisingly, I loved Stranger Things. And those kids are just too cute. I binged watch it at the lake ( rainy weekend too). Now don’t hate, but I never really got the whole Bangers and Mash thing. I’m not a big fan of sausages 😦 And I don’t know why. But I do love me a big fat bowl of mashed potatoes 🙂 Especially garlic mashed! Yum!
