Creamy Polenta and BBQ Shrimp
I’m getting sick of fucking people who engage in conversation with the cashier.
Little idle chit chat, you know?
“Yeah I know yuk-yuk-yuk it really has been raining I know, can you believe that!!?”
Those fucking people.
It’s not a bar ok you keep it going.
Keep-the-fucking-line going.
Now that you’re up there, now you got all day right??
Two seconds ago you were standing where I am in line blowing your cheeks out, exchanging looks with me like can you believe this guy??
Yeah and then you get up there and what do you fucking do?
You become part of the fucking problem.
And you know what I say in my little fucking inner Stalin, I say ELIMINATE THEM!
SO.
This is my healthier attempt at Shrimp & Grits.
Being in North Carolina last week put me in a southern state of mind and I came home ready to deep fry the living shit out of everything and watch bull riding on ESPN.
You believe that?
Bull riding is actually on ESPN.
I shit you not.
Look it up.
Creamy Polenta & BBQ Shrimp
3 cups Cooked Polenta (cook according to directions on package). 1 cup Buttermilk (dairy free sub: coconut cream). 1 lb Shrimp. 1/2 cup BBQ Sauce (your choice).
Preheat oven to 350F.
Rinse and thoroughly pat-dry the shrimp. Season with salt and pepper.
Lightly grease a shallow oven tray then place shrimp on tray, careful not to have any overlap.
Brush shrimp with BBQ sauce.
Place in oven uncovered.
Cook until the shrimp has just turned pink, 5-7 mins depending on your oven. Be careful not to overcook them.
REPEAT: EATING OVERCOOKED SHRIMP IS LIKE EATING RUBBER. Don’t do it to yourself.
When cooked, remove from oven and set aside somewhere warm (not the oven).
Whether you have firm or soft polenta, place it in a medium sauce pan over med heat and add the buttermilk (or coconut cream).
Bring to a boil then reduce the heat.
Stir, continuously, until the milk is thoroughly integrated and the polenta takes on a smooth, creamy texture.
For firm polenta, consider using an immersion blender to achieve the creamy texture, which what I ended up doing.
Add more milk as you see necessary to get the thinness or thickness you want.
Adjust seasoning with salt. Add pepper if you wish.
Serve by spooning the polenta into warm bowls and placing the shrimp in a windmill fashion on top.
Soooooo…. I cheated a little bit.
I made this with shrimp and langoustines.
They’re like baby lobsters.
I couldn’t help myself I had to get them.
Oh yeah oh yeah oh yeah… garnish with some green on top.

Guess what I watched last week on the treadmill? Bull riding.
I swear. I am 100% serious. I watched it while running during my lunch break. It was either a couple of ESPN talking heads, or Wolf Blitzer talking about the news, or the terrible local news, or a silly crime show on A&E, or an infomercial for a nonstick pot (which I am sure is super amazing but I don’t want to hear about nonstick pots while I am running), or… Bull riding. So I chose the bill riding. It was probably the first time in 15 years I had watched it for longer than 30 seconds, but yet there I was and there it was. And here you are talking about it a week later.

It is a sport. But I think a sport where a live bull could potentially step all over me and trample me in the dirt ranks about 587th on my list of sports I would ever choose to do. It also strikes me as great viewing for someone who has a hangover, even though I don’t get hangovers.

OMG now I want to get some Dinosaur BBQ sauce and cover shrimp in it because this sounds SO GOOD. Admittedly, sometimes I can be chatty, but I try to avoid that when there’s an actual line and people are behind me because that’s rude. Someone being a jerk ahead of me, though, will always elicit some commentary usually along the line of “wow, that person was a huge jerk to you” or similar.

Believe it or not, I’ve only just started loving polenta. Not sure why I didn’t like it before, I just didn’t. This recipe looks like the perfect combo, the wonderful crunch of a perfectly cooked shrimp with the creamy, smooth polenta. Just perfect.
OK, so I hate OLD PEOPLE in the line because they ALWAYS PAY WITH CORRECT CHANGE. I’m always thinking, “for fucks sake, you really don’t have all the time in the world, so speed it up already! damn.”

I grew up in a small town near the Gulf Coast in Texas, which means a lot of horrid political things. But it also means that I grew up watching bull riding on ESPN- I shit you not. My mom called Direct TV when they cancelled her subscription and yelled at them, specifically about how she missed bull riding, and they were SO afraid of her that they gave her back her bull riding. I’m so embarrassed.
Also- I am one of the loathed people in the check-out line making conversation with the cashier. I talk to people ALL.THE.TIME. and this is enlightening to see how annoying I am. :p
