Basil & Tomato Pizza
I’ve been eating sooooo much carbs lately like COMPLETE opposite of the things I should be eating.
Bread, junk food, fried food, pies…
PIES???
What the fuck eats pies in February??
And I know better because I do better…….
It’s just that we’ve been having a lot of snow hit the ground lately and something about being snowed in and getting all cozy makes me want to eat without consequences.
Speaking of the end of the world, I’ve got a scenario for you –
Say the zombies finally come or Trump fucked us so bad we’re now in a post-apocalyptic world, whichever comes first.
Say that you’re now in this post-apocalyptic world alright….and you can only grow three crops….
Fruits, vegetables, grains, whatever you want but you can only grow THREE crops for the rest of your life.
What three crops would you grow?
And no. You cannot trade or barter or sell your crops in exchange for someone else’s.
None of that nonsense.
Basil & Tomato Pizza
10-12 Red Cherry Tomatoes
4-6 Yellow Cherry Tomatoes
2-4 Orange Cherry Tomatoes
1 cup sliced Baby Bella Mushrooms
1 handful Fresh Basil Leaves (roughly chopped)
2 Medium Potatoes
1/4 cup Milk (sub: coconut milk)
Pizza Dough, made from scratch or ready-made (sub: flatbread)
Crushed Red Pepper
Grated Parmesan Cheese (optional)

Roughly chop the potatoes.
Fill a small pot of water and add the potatoes. Bring to a boil.
Cook until the potatoes are tender.
While the potatoes are cooking, slice the tomatoes and roughly chop the basil.
When the potatoes are cooked, remove from heat and set aside.
Add the milk to the cooked potatoes then using an immersion blender, mix until smooth.
You want to achieve a thick-ish creamy texture
Season with salt & pepper.
Set the potato ‘sauce’ aside.
Preheat the oven to 425F
Prep the dough or flatbread to to where it is ready to apply the toppings.
Spoon the potato ‘sauce’ onto the pizza in a even spread.
Layer the tomato slices on top intermixing in mushroom slices and basil pieces.
Place the pizza on a flat tray or pizza stone and put in oven.
Cook for 15 mins or until pizza crust is golden brown.
Note: My crust finished cooking before my toppings did so I used my broiler to finish them off and slightly char the tomatoes and basil on top.
When the pizza is cooked, remove from oven.
Slice immediately.
Serve with crushed red pepper and shredded cheese (optional).
I’m fucking done with carbs after this man, fuck that.

So, serious answer. If I can have only 3 crops, I need to go for versatility, and I also need a fruit, a vegetable, and a grain.
I think my crops would be spinach, potatoes, and strawberries.
Then if I had a fourth crop, I would have an endless supply of the seeds to build the world’s largest selection of Chia heads.
And then one of my Chia people would invent a pizza plant, and I would plant a fifth crop to give me an endless supply of ready-to-eat delicious pizzas.
Yes indeed, this would happen.

Wheat because bread trumps all. Potatoes because starchy goodness and I can make french fries. Probably tomato because I can make marinara sauce or ketchup… which is essential to french fries. (Also the blog got a face lift! I like it!)

Do these three crops have to be things I can actually grow here? If that is the case I would be tempted to say potatoes (or maybe squash instead as they are prolific and store well), leeks and courgettes as you can keep growing these yourself and it would more or less provide food all year round – also they would provide flowers for my bees so I could still have honey. Can we not have 5 crops – pretty please?? – then I would add raspberries (nice long cropping season and easy to grow more of them) or an apple tree and some kind of brassica – probably a cabbage.
I would prefer rice though but I don’t know how to grow it.
I think about the zombie apocalypse a lot – hence the stores of quality chocolate in my house – thinking that I could only grow three crops has got me feeling all anxious now – I mean I want tomatoes as well – throwing myself down on the floor and weeping a little …..

Love the potato sauce, I had all kinds of ideas but now I think that potlucktam has it sorted. Although I do love me a potato. Not sure I would have enough fight in me to survive the apocalypse without potatoes, and broccoli….argh….but then who could be bothered to survive it without wine? 🤔

So many things to say.
1. Are pies a seasonal food in America? I would say pies are an all the year round favourite, but especially good in winter. So, FYI, the rest of the world is out here supporting you in your February Pie Endeavour.
2. Three crops? Fuck, if the world collapses so badly that I need to actually grow the freaking food I need in order to survive, then fuck it. I’m out. Nope. Nope. Nope. By the time we rebuild society to the point where we have internet again I’ll probably be too old and ridiculous from malnourishment to truly enjoy it, so I see no point in prolonging my agony. I’d probably just hang out near someone who was growing cocoa beans and then continuously steal their crop until they got sick of my shit and shot me in the head. Death by chocolate. That’s how I’m going out.
3. I bloody love pizza, and this is babing.

I’d completely forgotten about your recipe until the other night and finally had a chance to try it out. Delicious! I used some leftover baked potatoes that were quite dry, so I needed to add about 3x as much milk; I went with soy, since I was what I had in the fridge.
