Panko Crusted Cod on Kale

So anyways, how is your week going?

You’re almost there I mean it’s Friday. They give you your paycheck yet?
That’s always the best.

 

They give you your paycheck… you go out for lunch like, “yall wannna get a drink? We’ll just have one, we’ll just have one!”

 

What is it about life where like 90% of the time you’re not doing what you want to be doing?

I mean I guess if there was no infrastructure we’d probably only live for like 30 years but just imagine 30 years of you being able to do what the fuck you wanna do.

 

But I guess then nobody would have taken the time should make the beer factory and then you wouldn’t have a bar and then what would you do?

You’d just try not to get eaten by animals.

Panko Crusted Cod and Kale

2 Cod Fillets
1 cup Panko Breadcrumbs
1 tbsp Smoked Paprika
Olive Oil
Salt
Pepper

A few cups Kale or Spinach
Olive Oil
Salt
Pepper

Preheat your oven to 375F

Rinse and pat dry the fish, then sprinkle it with  salt and pepper.

http://ivegotcake.comLightly drizzle olive or coconut oil on top and using your hands, spread it evenly on the fish.

 

In a small bowl, mix together the breadcrumbs, paprika and a light sprinkling of salt and pepper.
Coat the fish with the seasoned breadcrumbs.

Place the coat fish on an tinfoil lined tray, previously sprayed in cooking oil.
When the oven is appropriately heated, place the fish in the oven and cook for 15 mins or until the fish is cooked through.

 

While the fish is cooking, wilt a few cups of spinach or kale.
Lightly season it with salt and pepper, adjusting to taste.

Serve by placing the crumb-crusted cod on top of the bed of greens.

  1. I am seriously going to try this one at home. Nice and simple. Both my daughters like fish, and my 6-year old likes kale! What am I raising???

    I am telling you, I should have built the beer factory.

      1. Okay, so here’s what happened. The recipe is good. The fish I bought, on the other hand, was not good. I swear, drowning this cod in butter and deep-frying it in magical unicorn pixie dust and topping it with awesome sauce wouldn’t have salvaged this sorry cod. Sometimes it is very sad living in the Midwest. When I visit Boston next month, I am going to have to eat fish every day.

        And I am going to have to try a do-over with this recipe when the store is selling more worthy cod. But my daughter ate all her kale. Score!

        And yeah, if the fish sucks, the dish sucks.

  2. Oh, yummy this is my kind of fish! Will definitely be making this. I eat a lot of cod during the summer on the grill. So good.
    At least once a week I say to myself ‘ i just need to win the lottery’. But then I wonder if I did win, would I be doing whatever the eff I wanted? Or would I just be paranoid then about losing all the cash? haha
