Brunch Idea: Breakfast Burrito

Perverts fascinate me.

Breakfast Burrito

 

several Scrambled Eggs
1/2 an Onion
1 Habenero Pepper
2-3 Andouille Sausage Links
2 cups Cooked Rice, white or brown (do brown – healthier)
2 cup Mushrooms, sliced (optional)
small handful Shredded Cheese, any kind (optional)

2 Tortilla Wraps

In a large skillet, saute the onions, mushrooms (optional) and habenero pepper.
Add a little salt and pepper and set aside when done.

In a separate skillet, heat the olive oil over med-high heat and add the already cooked rice.
Add a little salt and pepper and saute the rice until it’s just a little oily, sort of like fried rice.
If it’s white rice you’re using, it’ll begin to turn a little translucent.

Set everything you sauteed aside somewhere warm.

 

Cook the andouille sausage by grilling, broiling, baking or sauteing.
Or follow the instructions on the package if it has any.

Right before serving, slice an avocado.

Serve by warming the tortilla in a lightly oiled skillet.
Add the shredded cheese on top (optional) and heat under med heat until it begins to melt.

Place all the ingredients and the sliced avocado on the tortilla wraps.

Feel free to drizzle a little of your favorite sauce on top.

Fold the tortilla wraps and serve warm.

Not as healthy I like my breakfast to be but you do what you can when you have a hangover.

Plus, this is brunch food.

9. Add the shredded cheese on top and heat under med heat until it begins to melt.
10. Place all the ingredients and the sliced avocado on the tortilla wraps.
Feel free to drizzle your favorite sauce on top.

11. Fold the tortilla wraps and serve warm.

  1. UNF this is making me want a breakfast burrito so badly. At least I can look forward to tacos tonight but that seems SO far away now!

    Incidentally they also pair very well with mimosas, if we’re talking about brunch. πŸ™‚

  2. So, I do feel the need here to point out that you start this post with a comment (an accurate one at that) about perverts, and then what is in your first two pictures?

    Sausage links. Thick, greasy, oblong-shaped… sausages.

    I don’t think I have anything more to say on this topic.

      Why do you do this to me, WHYYYYY!?!!
      I was in the middle of writing someone a goodbye card, feeling all sad and mournful and then your message pops up and just completely cracked me the hell up and now the mood is all ruined and I gotta work my way into sadness all over again!

      1. Ha ha ha! And after I finished commenting, know what else I realized? The third picture is of… eggs. And even though it ultimately becomes a burrito, that fourth picture could easily be a taco.

        Okay.. I will stop. See, you try to craft an innocent post about breakfast, and what do you get? A whole new twist on the term “food porn.”

        I mean, really…

  3. This is the second recipe I’ve seen today that had a rice/egg combo. Before today I’ve never seen that. I’m think I need to try it out. This looks amaze balls!

    1. you know it’s funny but like a lot of asian and mexican dishes have that combo.
      Like fried rice for asian…. or maybe like huervo rancheros for mexian.
      It’s a great combo! I think i should play around with it more too πŸ™‚

      1. Ohhhh yeah fried rice, way obvious but I didn’t think about that. I’m for sure gonig to try it for breakfast though. I also liked that you used a different sausage other than ground breakfast. Looks freaking amazing.
