Brunch Idea: Breakfast Burrito
Perverts fascinate me.
It’s like why can’t you just walk up and say hello?
Breakfast Burrito
several Scrambled Eggs
1/2 an Onion
1 Habenero Pepper
2-3 Andouille Sausage Links
2 cups Cooked Rice, white or brown (do brown – healthier)
2 cup Mushrooms, sliced (optional)
small handful Shredded Cheese, any kind (optional)
2 Tortilla Wraps

In a large skillet, saute the onions, mushrooms (optional) and habenero pepper.
Add a little salt and pepper and set aside when done.
In a separate skillet, heat the olive oil over med-high heat and add the already cooked rice.
Add a little salt and pepper and saute the rice until it’s just a little oily, sort of like fried rice.
If it’s white rice you’re using, it’ll begin to turn a little translucent.
Set everything you sauteed aside somewhere warm.
Cook the andouille sausage by grilling, broiling, baking or sauteing.
Or follow the instructions on the package if it has any.
Roughly chop into edible pieces.
Right before serving, slice an avocado.
Serve by warming the tortilla in a lightly oiled skillet.
Add the shredded cheese on top (optional) and heat under med heat until it begins to melt.
Place all the ingredients and the sliced avocado on the tortilla wraps.
Feel free to drizzle a little of your favorite sauce on top.
Fold the tortilla wraps and serve warm.
Not as healthy I like my breakfast to be but you do what you can when you have a hangover.
Plus, this is brunch food.

UNF this is making me want a breakfast burrito so badly. At least I can look forward to tacos tonight but that seems SO far away now!
Incidentally they also pair very well with mimosas, if we’re talking about brunch. π

This is the second recipe I’ve seen today that had a rice/egg combo. Before today I’ve never seen that. I’m think I need to try it out. This looks amaze balls!
you know it’s funny but like a lot of asian and mexican dishes have that combo.
Like fried rice for asian…. or maybe like huervo rancheros for mexian.
