Asian Noodle Salad

I saw this commercial from some computer company talking about how creating electronic tolls in Sweden helped reduce that country’s gridlock traffic by 20%

And at the end of it this girl walks out and is like; “my name is such and such and that’s what I’m working on!!”

 

And I just wanted to be like …. why don’t you work on creating some sort of digital poster that tells people to fucking use birth control??
Put some interactive visuals up and follow it with some goddamn statistics.

Because you ever think THAT might be contributing to all this gridlock traffic????

I’ve just been in traffic so goddamn long I literally had enough time to write this entire fucking post.

Asian Noodle Salad

2-3 small Assorted Peppers
1/2 cup Scallions, sliced (white and light green pieces only)
1 large handful Kale
1 large handful Red Cabbage, shredded or finely chopped
1 large handful Brussels Sprouts, shredded or finely chopped

1/2 packet of lo mein noodles, cooked per instructions (I used quinoa noodles)

2 tbsp Rice Vinegar
3 tbsp Soy Sauce
1 tbsp Sriracha Sauce
2 tsp Brown Sugar (sub: 1tsbp Agave)
1 tbsp Water
A light sprinkling of Salt
1 tbsp Olive Oil
1 tbsp Peanut Sauce

Get all the veggies shredded or finely chopped.
Set aside.

In a small bowl, add all the liquid ingredients together and sprinkle in a few pinches of salt.

Cook the noodles according to its instructions.

In a large bowl, combine the noddles with the veggies.

With a large spoon or wide comb fork, mix it all together.

 

Serve with shaved almond slivers and red pepper flakes on top.

Asian Noodle Salad

4. In a large bowl, combine the noddles with the veggies. Pour the dressing over and around the noodles.
5. With a large spoon or wide comb fork, mix it all together.

6. Serve with shaved almond slivers and red pepper flakes on top.

You can serve this warm or cold.
This recipe serves two. Use the whole pack and double up on the sauce and veggies portions for 4-5 servings.

  3. Ok, that must have been some crazy ass traffic jam if you were able to write this entire post! And edit pictures!! Speaking of which this asian noodle salad looks so good. I’ve been trying to think of something different to make for Easter dinner and this would be a great dish to serve! Hope you have great week ahead with no traffic jams πŸ™‚
