Wild Rice and Chicken

Wild Rice and Chicken

 

 

3-4 cups Cooked Rice (white or brown)
3-4 Boneless Chicken Breasts (chopped into 1″ chunks)
8-10 slices Bacon
1 cup Sweet Green Peas
1 cup chopped Pineapples
1 cup diced Assorted Bell Peppers
1 cup diced Carrots
1/2 an Onion
2-3 Stalks of Scallions
3 tbsp Soy Sauce
Olive Oil
Minced Garlic
Salt
Pepper

This makes about 4 servings annnnnd if you lose the sweet pineapple, obviously no bacon and use brown rice, it’s healthyyyyyyyyy!

Wild Rice & Chicken

3-4 cups Cooked Rice (white or brown)
3-4 Boneless Chicken Breasts (chopped into 1″ chunks)
8-10 slices Bacon (optional)
1 cup Sweet Green Peas
1 cup chopped Pineapples
1 cup diced Assorted Bell Peppers
1 cup diced Carrots
1/2 an Onion
2-3 Stalks of Scallions
3 tbsp Soy Sauce
Olive Oil
Minced Garlic
Salt
Pepper

INSTRUCTIONS

1. Cook the bacon and set aside for later.

2. In a large, deep pan, heat the oil over med-high heat and add in the chopped chicken
3. Season the chicken with salt, pepper, minced garlic and whatever other seasonings you want

4. Cook, stirring often until the chicken pieces are cooked through

5. In the same pan, pour in a little more oil and mix in the diced onions and carrots.
6. Saute, stirring often to the onions don’t stick to the pan.
7. When the carrots start to soften, add in the peas and bell peppers.
8. Stir, stir, stir for 3-5 mins.

9. Finally, stir in the cooked rice, pineapple pieces, scallions and watercress
10. Saute, stirring often and adding more oil here and there if needed. Taste and adjust the seasoning where appropriate.

11. Get the reserved bacon slices and chop into bits and add to the rice mixture.
12. Give things one final stir then serve immediately, and maybe with a dash of Sriracha sauce on top

  2. Did someone say chicken, I’m sooooo there- this is so my kinda meal!! Ok, now let’s talk rice. Last year I went from rice to cous cous coz the latter is quicker but then I noticed it bloated me and I switched to Quinoa as that’s supposed to be the healthy option. But the last time I made Quinoa, spinach, bell peppers, chicken etc I must have indulged coz let’s just say I was a tad gassy…maybe I didn’t wash the Quinoa enough, anyhoo, I wanted to share my struggle with you!!! ( :
